Observed potato salad, Cole slaw, BBQ chicken and BBQ pork being held above 41 degrees F in RIC. CA: Lower the thermostat of that RIC to hold the contents below 41 degrees F.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed members of kitchen staff not using hair restraint. CA: Acquire and don hair restraint for any staff member having hair longer than 1/2 inch and works in food preparation area.
