Observed uncovered pork, chicken and wontons under prep top cooler reach in cooler. All foods raw or cooked must be kept covered at all times.
4-2B - food-contact surfaces: cleaned & sanitized

Observed cups being used as scoops in bulk ingredients flour, rice. Use a scoop and keep the handle in the upright position to help prevent contamination. REPEAT
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no consistent form of date marking observed during the inspection. All food items must be dated once taken out of original packaging and discarded 7 days later. Please date ALL foods
12A - contamination prevented during food preparation, storage, display

Observed several jugs of frying oil sitting directly on the floor of the main kitchen. All foods and food products must be kept stored 6 inches off the floor.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Facility has no sanitizer test strips for automatic ware washer nor the 3-compartment sink. Please obtain proper sanitizer test strips that you need so you can test the solution.
15C - nonfood-contact surfaces clean

Observed frame wear and other nonfood contact surfaces soiled with old grease and buildup. Need to clean equipment frame wear at a frequency to prevent buildup.
