Observed multiple time/temperature control for safety (TCS) items in walk-in cooler (WIC) cold holding above 41F. Corrective action (CA): Person-in charge (PIC) instructed to cold hold all TCS items at 41F or below. Items prepared 8/14 within four hour cooling stage moved to walk-in freezer (WIF), properly cooled within time frame. ITems held longer than four hours discarded.
