Observed dish machine in ware-washing area with a temperature reading of 152F. Corrective Action (CA): Person in charge (PIC) instructed to ensure high temperature dish machine reaches a minimum temperature of 160F. PIC put in work order. PIC is using 4-compartment sink to sanitizie. COS>
