Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed concentration of chlorine in dish machine less than 50ppm.Corrective Action (CA): Person in Charge (PIC) instructed to ensure chlorine sanitizer concentration remains between 50-100ppm. PIC replaced sanitizer container. Chlorine concentration tested at proper concentration. COS. REPEAT.

Observed spoons at bar held in room temperature water. PIC replaced with water at 150F. COS. REPEAT.

Observed wood material used as coving in front of walk-in cooler. REPEAT.
