Observed country gravy (115F) being hot held below 135F inside the steam well. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F or above. Corrected on Site (COS): PIC discarded the food item.

Observed trash debris on the ground outside of the dumpster. Food and debris (except for cardboard boxes) are not allowed to be on the ground. Sweep around the dumpster area and discard waste in the dumpster.
