Observed a gallon of milk stored in the walk-in cooler without the screw top lid. Store food covered to protect from overhead contamination. Person in charge (PIC) put milk in a food grade container with a lid.

Observed several Time/Temperature Control for Safety Foods (TCS) being stored in the walk in cooler in the banquet center above 41F. Raw chicken tenders (44F), White wine sauce (45F), Mozzarella cheese (45F). Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. Corrected on Site (COS): Person in Charge discarded all food items. Ambient air: 45F. Per the food and beverage manager: the unit was worked on a week ago and they will call a reputable repair company to come back out to work on the unit.

Observed an employee's Crush drink bottle being stored next to customer items in the reach in cooler. Also observed an employee's water bottle next to customer items in the reach in freezer. Also observed an employee's jacket stored on top of boxes of single use gloves. Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions. Corrected on Site(COS): Person in Charge discarded the drink items and moved the employee's jacket to a coat rack.

Observed an opened container of whole liquid egg at 65 F stored on the counter in the food prep area. Possibly the eggs have been on the counter during the breakfast time period. All cold hold Time/Temperature Control for Safety (TCS) foods must be 41 F or below. Please keep whole liquid eggs stored inside the prep cooler or use an ice bath to keep the product cold held at the correct temperature. Corrected on Site (COS): Food item discarded.

Observed a pink substance located on the baffle inside of both ice machines located in the main kitchen and the second kitchen. Food contact surfaces must be cleaned frequently to prevent contamination. Remove or melt the ice inside of the machine, clean and sanitize the inside of the machine (including the baffle ) and allow the machine to make fresh ice inside.

Observed a container of marinara sauce with a prep date of July 11th and a container of roast beef, ham, and turkey deli meat with an open/prep date of July 18th inside of the walk-in cooler in the second kitchen area (located near the conference area). A food that requires date marking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. Corrected on Site (COS): Food items discarded.

Observed the dumpster lid on the left side missing causing the dumpster to not be completely covered. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered when the dumpster is stored outside of the establishment. Call the dumpster company to deliver a new dumpster. Keep the dumpster closed when not in use.
