Observed no hand soap at the bar hnad washing sink. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Person in charge placed hand soap at the sink.

Observed the hand washing sink of the main kitchen full of utensils and other items. A handwashing facility may not be used for purposes other than handwashing. Person in charge removed items from the sink.

Observed unlabeld chemical bottles near the three compartment sink area.Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Person in charge will label bottles with their common name.

Observed the ice machine with a pink substance build-up on the baffle. Food contact surfaces, utensils, and equipment shall be cleaned frequently to avoid contamination of food. Discard the ice, wash, rinse, and sanitize ice machine. Clean ice machine at least once a week.

Observed the hot water sanitizing dishwasher reaching 148F. Hot water mechanical operations by being cycled through equipment that is set up as specified under subsections (6)(e), (l), and (m) of this Rule and achieving a utensil surface temperature of 160ºF (71ºC) as measured by an irreversible registering temperature indicator. Have the dishwasher repaired, use three compartment sink to wash, rinse and sanitize utensils.

Person in charge could not provide employee health policy for employees that are currently working. The permit holder shall require food employees and conditional employees to report to the CFSM and person in charge, information about their health and activities as they relate to diseases that are transmissible through food. A food employee or conditional employee shall report the information in a manner that allows the CFSM and person in charge to reduce the risk of foodborne disease transmission, including providing necessary additional information, such as the date of onset of symptoms and an illness, or of a diagnosis without symptoms. Have all employees read and sign an approved health policy and have it easily accessible.
