Observed the following time/temperature control for safety (TCS) foods being held on time as public health control but not marked indicating the starting or ending time: Cream cheese (52F), Waffle Batter (57F) and Shredded Cheese (57F). Per person in charge the items are held from 6-10 a.m. If time without temperature control is used as the public health control up to a maximum of 4 hours: The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Ensure proper documentation of items being used on TPHC. Food being discarded at 10:00 a.m.
