Observed the ambient air temperature inside the walk-in cooler at 42-43 F. Noticed a block of ice behind the fan unit which is an indication of the ambient air temperature possibly being above 41 F. The ambient air temperature inside the walk-in cooler must be 41 F or below, preferably for the ambient air temperature to be at 37-38 F. The Person In Charge (PIC) contacted his supervisor and a repair representative was en route to the facility. Please have a reputable company have their representative repair the walk-in cooler. Corrected on Site (COS): Food items recently prepped were moved to another unit to continue the cooling process.
