2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
Observed the person in charge (PIC) cannot provide the Employee Reporting Agreement of any of their employees. Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food. A new copy will be printed out for them to make copies and provide to their employees.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels at the hand sink in the breakfast area and no paper towels in any of the bathrooms that are connected to the breakfast area. Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels, or other means of single use hand drying options. Add paper towels to all handsinks.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed a bowl of apples that are not wrapped and that do not have any utensils to grab them with to avoid bare hand contact. Food, such as apples, must be stored wrapped or with utensils such as tongs to avoid bare-handing. Wrap apples in plastic or set out tongs with them.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed the facility has no test strips for sanitizer. PIC states that they use bleach from housekeeping. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Buy test strips.
