Observed sliced American cheese (44F) being stored inside the reach in cooler above 41F. The ambient air temperature of the unit is 38F. Per the Person in charge (PIC), the cheese was prepped this morning prior to arrival. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. COS: PIC moved the container of cheese to the walk-in cooler to cool to 41F or below.
