Observed meatballs in marinara (104F) hot holding below 135F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F or above. COS: Person in charge reheated meatballs in the microwave. Observed meatballs (182F) after being reheated in the microwave.
