12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloths stored in sink and surface sanitizer at a concentration of 0ppm. After further investigation, it was observed that the sanitizer line at the 3 compartment sink was clogged. Manager cleared the clog and the sanitizer was able to dispense the required concentration for the sink and surface solution. Manager re-made all the sanitizing buckets and replaced the towels with new ones.

Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed plates and bowls not stored inverted or with a top cover plate. Manager corrected on site and wrapped all the top plates and bowls with plastic wrap to prevent food contact surface of the plates from becoming contaminated.

Observed food containers wet nesting on the clean dish rack. Please ensure that all dishes are completely air dried before stacking.

Observed ceiling tile in the unisex restroom removed, leaving an opening in the ceiling.
