6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed several food items with expired dates in the reach in cooler and the walk in cooler (calamari 12/19, diced potatoes 12/13, zucchini 12/17, tomato sauce 12/19, beans 12/23, cabbage rolls 12/23, raw marinated chicken 12/13, spinach dip 12/13, and lamb chops 12/23). All food items that are expired must be discarded. Please educate staff on the importance of food safety and to discard food items at the end of the 7 day period (spoke with the manager and kitchen staff).

- A food that requires datemarking shall be discarded if it:
(i) Exceeds 7 days, not including the time that the product is frozen; P
(ii) Is in a container or package that does not bear a date or day; P or
(iii) Is inappropriately marked with a date or day that exceeds 7 days . P
- Refrigerated, ready-to-eat, time / temperature control for safety food prepared in a food service establishment and dispensed through a vending machine with an automatic shutoff control shall be discarded if it exceeds 7 days. P
14B - utensils, equipment and linens: properly stored, dried, handled

Observed bowls on the food preparation line stored not inverted or covered to protect from contamination. PIC started covering the bowls to protect from contamination (COS).
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(c) - multiuse food-contact surfaces (pf)
Observed a wire skimmer hanging with clean dishes in bad repair and wire hanging from it. Advised the kitchen staff to discard the skimmer (COS).
Observed the ice bucket stored on top of the ice machine not inverted to protect from contamination.
511-6-1.05(2)(c) - Multiuse Food-Contact Surfaces (Pf) (c) Multiuse Food-Contact Surfaces.
- Multiuse food-contact surfaces shall be:
(i) Smooth; Pf
(ii) Free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections; Pf
(iii) Free of sharp internal angles, corners, and crevices; Pf
(iv) Finished to have smooth welds and joints; Pf and
(v) Except as specified in paragraph 2 of this subsection, accessible for cleaning and inspection by one of the following methods:
(I) Without being disassembled, Pf
(II) By disassembling without the use of tools, Pf or
(III) By easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches. Pf
- The requirement in paragraph 1(v) of this subsection does not apply to cooking oil storage tanks, Distribution lines for cooking oils, or beverage syrup lines or tubes.
15C - nonfood-contact surfaces clean

Observed an accumulation of old food build up underneath the shelf where the heat lamp is. Please clean regularly to avoid build up.
511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
