Observed shredded cheese stored in the walk in cooler with a preparation date of 9/4 and a expiration of 9/10/25. PIC discarded the cheese (COS).

Observed the pipes in the walk in freezer with a thick build-up of ice. Also, observed a metal pan underneath the ice build-up catching water that had frozen. Make sure to move all food from underneath the leak and put in a service request to fix the pipe. PIC stated that a service order has already been placed in the system for the leak.

Observed the ice scoop container with several cracks (not maintained). PIC discarded the container and placed a metal pan with a lid on the ice machine to cover the ice scoop (COS).

Observed dishes drying on a storage rack completely wet in front of the 3-compartment sink and in the dishwasher room. Advised PIC to make sure the dishes are completely dried before letting them dry on the storage racks. Dishes should be completely dry in storage.
