4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed dishes not being properly washed in the three compartment sink. Staff member was washing and rinsing only. PIC advised that the sink must be set up properly to wash, rinse, and sanitize dishes. PIC is using bleach to sanitize dishes. PIC and staff trained on measuring sanitizer with test strips. Once corrected, the sanitizer was observed at 100 ppm.

Observed chicken and shrimp was being cooled in deep containers. PIC will use different methods for cooling including shallow pans to properly cool TCS foods.

- Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:
(i) Placing the food in shallow pans; Pf
(ii) Separating the food into smaller or thinner portions; Pf
(iii) Using rapid cooling equipment; Pf
(iv) Stirring the food in a container placed in an ice water bath; Pf
(v) Using containers that facilitate heat transfer; Pf
(vi) Adding ice as an ingredient; Pf or
(vii) Other effective methods. Pf
- When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

Observed self-closure not provided on the restroom door. PIC advised to have the self-closures installed by 5/22/2026.

Observed the dumpster lids and dumpster plug missing on the dumpster. PIC advised to contact the owner and landlord to have the dumpster replaced by 5/22/2026.

- Inside the food service establishment if the receptacles and units:
(i) Contain food residue and are not in continuous use; or
(ii) After they are filled; and
- With tight-fitting lids or doors if kept outside the food service establishment.
