Since fish shares fryer with chicken, will need to communicate this to customers. See the new rules education packet provided for more information and train employees on allergy awareness and allergen cross contact hazards. COS: Inspector provided education on allergen cross contact and how to add required customer communication of allergen hazards.

Person in charge not performing duties; not ensuring employees properly reheating Time/Temperature Control for Safety Foods within the required 2-hour time frame. COS: PIC personally reheated the items on the stove that were placed in the warmer cold. Ca: Ensure employees are reheating the food prior to hot holding and checking temperature with a calibrated thermometer.
