Observed microwave in main kitchen not maintained clean to sight and touch. CA: Food contact surfaces must be maintained clean to sight and touch. COS: Microwave was cleaned.

Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed mashed potatoes(115 degrees F) and gravy(85 degrees F) not being monitored to cool to 70 degrees within 2 hours. CA: TCS foods must be cooled from 135 deg. F to 70 deg. F within 2 hours and to 41 deg. F within 4 hours. CA: Items were placed in ice bath and to be stirred and monitored to ensure limits are met.
