11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed raw chicken thawing in prep sink without running water over it. When thawing foods under running water, water must be flowing continuously and foods must not be left in still water. CA: Chicken was taken out to be thawed at 7:30AM, at 10AM food was at 68 degrees F. Food was put in the cooler to lower temperature back to 41 degrees F or below. Thawed chicken reached a temperature of 51 degrees F by 10:45AM. PIC will monitor cooling to 41 degrees F.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed Oreos, coffee, and opened Monster energy drink on/next to prep surfaces in the front kitchen. Employee food and drinks cannot be stored where they could contaminate foods sold in the facility. CA: PIC will have an area designated for employee food and drink storage.
