Observed multiple food items in walk in cooler stored not covered/protected(chicken, pork). CA: PIC covered food items.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(o) - manual warewashing equipment, chemical sanitization using detergent sanitizers(c)
Observed 3 compartment sink with no sanitizer in water. CA: PIC applied proper sanitizer level in 3rd sink.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed coke nozzles with food debris build up. CA: Discussed proper cleaning frequency with PIC and PIC immediately cleaned.
12A - contamination prevented during food preparation, storage, display

Food was not protected from other sources of environmental sources of contamination. Observed condensation dripping in walk in cooler near/around food items. CA: PIC moved food and a shield will be installed to catch excess water.

Observed food/grease buildup on floors and walls along cook area. CA: Discussed with PIC on routine cleaning methods.
