6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed hard and crumbly Velveta cheese in reach in cooler opened and not date marked. All foods that are prepped, cooked, or opened in the restaurant must be date marked for 7 days and used or discarded within 7 days. CA: PIC discarded cheese.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed pork chops to be used tomorrow thawing on counter in main kitchen. Foods must be thawed either in the fridge overnight or under cold running water. CA: Food was still at 41 degrees or below. PIC put pork chops in the fridge to be thawed overnight.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloth in main kitchen not stored in a sanitizer solution. All wet wiping cloths must be stored in a sanitizer solution when not in use to prevent bacterial growth. CA: PIC discarded wet rag.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(g)(1)&(3) - kitchenware and tableware, single-service/-use items properly handled to protect food-/lip-contact surfaces (c)
Observed single use cups and lids stored under the self-serve counter not in protective plastic wrapping. Single use items must be stored in such a way to protect them from dust, dirt, or other contamination. CA: PIC will discard cups and lids that are not in plastic sleeve.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(r),(s) - frequency, removal of refuse, recyclables and returnables often enough to minimize odors and attracting pests; receptacles or vehicles, removal from premises in approved manner (c)
Observed pots of grease stored in kitchen. Grease must be removed from the facility in a timely manner to prevent pest attraction. CA: PIC will have pots dumped into grease receptacle and cleaned.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.05(2)(n) - exhaust ventilation hood systems, designed to prevent grease or condensation from dripping on food/equipment (c)
Observed grease buildup on hood vent. Hood vent must be cleaned frequently enough to prevent grease buildup. CA: PIC has contacted cleaning service to come out next week.
