Observed improper horizontal separation of raw animal foods. The following raw animal foods were observed to be stored from left to right: raw bacon; raw pork sausage patties, raw pork loin, raw chicken. Raw animal foods shall be stored, based on minimum internal cooking temperature, in a manner that prevents cross contamination between other raw animal foods and RTE foods. Corrective Actions: PIC rearranged raw animal foods so that cross contamination was prevented.

Observed pressure gauge on high temp dish machine to read approximately 12 psi. Data plate on dish machine states pressure should measure between 15-25 psi. The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine, as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing control valve, shall be within the range specified on the machine manufacturer’s data plate. Corrective Actions: PIC stated all dishes and equipment are to be washed in the dish machine and then rinsed and sanitized in the 3-compartment warewash sink until the pressure gauge can be repaired. Maintenance was notified to contact Ecolab to service the dish machine.

First Consecutive Repeat Violation Observed PIC and food employee actively handling food while wearing wristband. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Corrective Actions: PIC and food employee removed the wristband and washed their hands before returning to work.

Observed QAC sanitizing solution test strips with expiration date of the year 2020. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Corrective Actions: PIC stated Ecolab will be contacted to provide new QAC test strips.

Observed QAC sanitizing solution to have 0 ppm concentration in buckets. QAC sanitizing solution shall have concentration of at least 150 ppm. Corrective Actions: PIC made new solution at proper concentration.

Observed food employee scooping ice for drinks while wearing a watch on their wrist. Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Corrective Actions: PIC will retrain employees on personal cleanliness policies per the GA Food Code.

Second Consecutive Repeat Violation Observed pressure gauge on dish machine to be in disrepair and not functioning properly. Pressure Measuring Devices. Pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse shall have increments of 1 pound per square inch (7 kilopascals) or smaller and shall be accurate to ± 2 pounds per square inch (± 14 kilopascals) in the 15-25 pounds per square inch (100-170 kilopascals) range. Corrective Actions: PIC stated maintenance will be contacted to repair pressure gauge.
