11A - proper cooling methods used: adequate equipment for temperature control

Observed cole slaw to be cooling, while fully covered. 511-6-1.04(6)(e) - Cooling Methods (Pf, C) (e) Cooling Methods. 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: The PIC had the cole slaw uncovered and EHS educated about the importance of allowing for maximum heat transfer to cool TCS foods down to 41F within 4 hours. 15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(b) - cutting surfaces (c)
Observed both cutting boards to have deep grooves, preventing adequate cleaning and sanitizing of these food contact surfaces. 511-6-1.05(6)(b) - Cutting Surfaces (C) (b) Cutting Surfaces. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they cannot be resurfaced. Note: The facility will need to resurface the cutting boards or replace them if resurfacing is not an option.
