Observed mop to not be placed in a position that allows air-drying between uses. 511-6-1.07(5)(f) - Drying Mops (C) (f) Drying Mops. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. COS: The PIC immediately placed the mop in a position to air-dry between uses.

Upon arrival to inspection, no person in charge (PIC) was present. There must be a person in charge on the premises of the food service establishment at all times. Corrective Actions: EHS addressed all violations observed during the inspection to the employees who were present.

Observed accumulated mold debris inside the ice machine. Cleaning of Equipment and Utensils. Equipment, Food-Contact Surfaces, and Utensils. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Corrective Actions: EHS educated employees on the importance of maintaining the cleanliness of the ice machine. Employees stated the ice machine will be cleaned at COB.

Observed employee wearing a watch while preparing food. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Corrective Actions: PIC instructed employee to remove wristwatch and wash their hands.

Observed containers near 3-compartment sink wet nesting.

(10) Protection of Clean Items.

(a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food

Note: PIC rearranged containers to allow for proper air drying.

Observed no covered receptacle in women's restroom.

(h) Toilet Room Receptacle, Covered. A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.

Note: PIC will contact appropriate personnel to acquire a covered receptacle.
