Regulation: 511-6-1.07(6)(o) - medicines, restriction & storage (p, pf)
Employee's medicine was observed on a shelf next to food items.
Medicines that are in a food service establishment for the employee’s use shall be labeled with a legible manufacturer’s label and located to prevent the contamination of food, equipment, utensils, linens, and single-service and single-use articles; and located so they are inaccessible to children.
Corrective Actions: PIC immediately relocated medicine to designated area.

Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed chlorine sanitizer bucket with concentration greater than 100 ppm. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall: Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions). Chlorine sanitizer solution shall have maximum concentration of 100 ppm. Corrective Actions: PIC diluted chlorine sanitizer to proper concentration between 50-100 ppm.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Observed drain plug missing on shared dumpster. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. Corrective Actions: PIC to call building owner to install missing drain plug in dumpster.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(k),(l) - storing refuse, recyclables & receptacles; areas, enclosures, & receptacles, good repair (c)
Observed shared dumpster to be missing sliding door. Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair. Corrective Actions: PIC to call building owner to have dumpster repaired/replaced as needed.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed heavy dust accumulation on vents in both restrooms. Observed heavy accumulation of dust/debris on fan cover for WIC condenser. Observed gasket on WIC to have accumulation of black debris. All physical facilities shall be maintained in good repair.
- The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Corrective Actions: PIC to clean all items mentioned above at COB.
