4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
QUAT sanitizer concentration that is dispensed at the 3-comp sink is too high, 500+ppm. Facility is to dilute and test the sanitizer concentration prior to use (to COS) until the sanitizer dispenser can be fixed and functioning properly to dilute at the required concentration. Sanitizer approved chemical is not being used to clean countertops and non-food contact surfaces; another cleaning product is being used at this time. Discussed with PIC options for making sanitizer spray bottles and process for sanitizing non-food contact surfaces. PIC made a sanitizer spray bottle at the required temperature to COS.

Popcorn buckets in food prep room were not stored inverted. PIC fixed popcorn buckets to COS. Slushie lid cups are stored underneath paper towel dispenser and are exposed to splash and other potential contamination. Locate a new location for slushie lid cups to be stored away from potential contamination. Single-service and single-use articles shall be protected from contamination per the Georgia Food Code.
