Observed food contaminated by unsanitized equipment; Existing adhesive film observed along the interior of the ice machine, in an area subject to frequent contact with edible ice, constitutes a noncompliant food-contact surface. Under the Georgia Food Service Rules, ice is food, and surfaces within an ice machine that contact food, or from which food may drain, drip, or splash into food, are food-contact surfaces. Such surfaces must be safe, durable, corrosion-resistant, nonabsorbent, smooth, and easily cleanable; food may contact only equipment and utensil surfaces that are properly cleaned and sanitized; equipment must be maintained in good repair; and food-contact surfaces must be clean to sight and touch. Because ice makers and ice bins must be routinely cleaned to prevent slime, mold, soil residue, and the accumulation of microorganisms, the presence of adhesive film in this location creates a condition that may retain contamination, impede effective cleaning and sanitization, and adulterate edible ice.
