All cold holding units and hot holding units were checked and all temperatures were in compliance (unless noted otherwise in the temperature log). Sunny side egg has been removed from the menu board. The PIC advised that all other menu items are fully cooked. An informal inspection will be completed by 03/20/2026. Ensure all uncorrected violations have been corrected by that time. Person in charge shall explain their responsibility for preventing the transmission of foodborne disease by a food employee who has a disease or medical condition that may cause foodborne disease and can describe the symptoms associated with the diseases that are transmissible through food. They also shall be able to explain how food employees and conditional employees comply with reporting responsibilities and exclusion or restriction of food employees. 6-1A: .04(6)(f)Cheesecake & watermelon observed cold holding above 41 F in the front display cooler and sliced tomato & blended cheese slices were observed cold holding above 41 in the glass front one door cooler in the kitchen area (see temperature log). Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: The food items were discarded.

6-2: .04(6)(h)Multiple time/temperature control for safety foods (red sauce, enchilada sauce, barbacoa, hot dogs & cut leafy greens) that had been properly date marked were observed being held longer than seven total days. A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. (P) Corrective Actions: These food items were discarded (training provided).
