6-1A: .04(6)(f)Observed several TCS food items ( raw veal, pork sausage, raw chicken, prepped chicken parmesan) that were above 41° F in the walk in cooler and the prep unit in front of the stove.// Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. (P) Corrective Actions: Person in charge discarded all items that were above 41° F. Please see temperature log below.//
