NOTE: All cold holding and hot holding temperatures in compliance, unless noted. NOTE: Per person in charge, it was observed within the hour that the prep line cooler was not working properly. Per person in charge, a new prep line cooler was purchased before inspection, invoice provided. Per person in charge, temperatures are checked in the prep line cooler every hour and foods had gone up to 42F within the past hour. Corrective actions were made during inspection. Recommended checking the temperatures of TCS foods in all cold hold units going forward. NOTE: TCS foods may only be held in the facility for 7 days. The date foods are cooked, opened, or prepared is considered day 1. If foods are frozen, the date foods are cooked, opened, or prepared, the date foods are frozen, and the date foods are thawed must be listed on food.
