Observed container with cooked steak, container with cooked chicken in reach-in cooler not stored covered. Observed container with raw fish in reach-in freezer not covered. Food items were not actively cooling. CA: Food must be covered except when cooling. COS: Food containers were covered.

Observed container of cooked shredded chicken stored in reach-in cooler without date marking. CA: Refrigerated, ready-to-eat, TCS food prepared and held for more than 24 hours shall be clearly marked for a maximum of 7 days. COS: Shredded chicken was discarded.

Observed exterior of microwave, ice machine lid/handle, cooler and freezer soiled with brown debris. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. COS:PIC cleaned non-food contact surfaces to sight and touch.
