6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed potentially hazardous TCS foods items improperly cold holding above 41 degrees F on counter above RIC. CA: TCS food items being cold held shall be held at 41 degrees F or below. COS: PIC stated vanilla and mocha coffee mixes had been out on counter for an hour and were placed in RIC to rapidly cool.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed multiple employees wearing watches and bracelets while handling/prepping food (making burgers, boxing fried items, etc). CA: Employees handling or preparing food shall not bear jewelry with the exception of a single band ring such as a wedding ring. COS: PIC instructed employees to remove bracelets and watches.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal drink stored directly on prep top at bun warmer station. CA: Employee personal items shall be stored in order to prevent potential contamination of facility food or equipment. COS: PIC instructed employee to relocate drink.
