Observed two cartons of eggs being stored above dairy products in a reach in cooler in the main kitchen area at the time of this inspection. COS: Eggs removed and stored at the bottom of cooler. CA: Food shall be protected from cross contamination by following proper stacking order with eggs stored at the bottom with other poultry products.
6-1A - proper cold holding temperatures

Observed reach in cooler besides small dishwasher was displaying an ambient temperature of 60F, and was holding TCS items (butter, pecan butter, okra) at a range of 51F to 54F at the time of this inspection. COS: TCS items discarded. CA: Time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above.
