4-2B - food-contact surfaces: cleaned & sanitized
Observed build up of grime on the food contact surfaces inside the ice machine. Rule: Food contact surfaces must be kept clean to sight and touch. Drain ice and thoroughly clean. Increase the cleaning frequency to prevent build up.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Cabinets and shelving throughout observed with dust, debris and water/spill spots. Some areas have damaged paint as well. Rule: Nonfood contact surfaces shall cleaned at a frequency that prevents accumulations.
