6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed diced tomatoes which was not being properly cold held in a prep top unit with a temperature of 52 degrees. Tomatoes had been in prep top for less than 4 hours. PIC placed tomatoes in reach in to cool to a temperature of 41 or less.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Plumbing shall be kept in good repair. Hand sink nearest to the grill has a leak on the hot water side.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(j) - single-service and single-use articles, safe and clean (p, c)
Materials that are used to make single-service and single-use articles may not allow the migration of deleterious substances or impart colors, odors, or tastes to food. Observed foods such as raw beef being stored in the freezer in grocery store bags. PIC will remove foods from grocery store bags.
