Observed ready-to eat foods such as shredded cheese not properly date-marked in the walk-in cooler and reach-in cooler units. Discussed with PIC to make sure any food opened and out of original packaging is date-marked and disposed of properly

Observed soiled residue in utensil containers. CA: Food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. COS: All bins and items were cleaned.

Observed multiple water damaged ceiling tiles. CA: All physical facilities shall be maintained in good repair. Ceiling tiles should be replaced ASAP.

Observed incomplete and inconsistent TPHC records. Only clear record was on 10/10/24 and four items were listed for the day. Was informed by owner that TPHC is being performed but have had difficulties keeping records. Informed PIC written procedures shall be prepared in advance, maintained in the food service establishment, and made available to the regulatory authority upon request
