I observed failure to clean and sanitize chopping board 511-6-1.05(7)(a)1 - Equipment, Food-Contact Surfaces,& Utensils (Pf) (7) Cleaning of Equipment and Utensils.
(a) Equipment, Food-Contact Surfaces, and Utensils.
- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. C.A: PIC advised to clean and sanitize chopping board

I observed failure to close the back doo 511-6-1.07(2)(m) - Outer Openings Protected (C) (m) Outer Openings, Protected. 3. Exterior doors used as exits need not be self-closing if they are:
(i) Solid and tight-fitting;
(ii) Designated for use only when an emergency exists, by the fire protection authority that has jurisdiction over the food establishment; and C.A:PIC told to ensure the bacdoor is closed at all times so as to prevent entry of pests and rodents

I observed inability of PIC to provide test strip for sanitizer 511-6-1.05(6)(p) - Warewashing Equipment, Determining Chemical Sanitizer Concentration (Pf) (p) Warewashing Equipment, Determining Chemical Sanitizer Concentration. Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device. C.A:PIC advised to get a test kit for the sanitizer and always test for adequate sanitizer concentration
