EHS observed food storage containers still being stacked on each other while still wet from having been washed.

(a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food.

CA: PIC unstacked items and put them out to air dry individually.

Observed several cutting boards throughout the kitchen with scoring and heavy staining. (CA) Advised the PIC that the cutting boards needed to be cleaned and replaced at a more frequent interval. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf.
