Observed equipment food-contact surfaces and utensils not sanitized and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Employee indicated sanitizer sink pipe is leaking and needs fixing. 511-6-1.05(6)(o) - Manual Warewashing Equipment, Chemical Sanitization using Detergent Sanitizers(C)

Observed a leak under a 3 compartment sink pipe in several areas. 511-6-1.06(2)(r) - System Maintained in Good Repair (P, C) (r) System Maintained in Good Repair. A plumbing system shall be repaired according to law; P and maintained in good repair. PIC instructed to fix as soon as possible.

Observed expired test strip (quat). 511-6-1.05(3)(h),(i),(j) - Temperature Measuring Device, Manual Warewashing; Sanitizing Solutions, Testing Device (Pf) (h) Temperature Measuring Devices, Manual and Mechanical Warewashing.

1. In manual warewashing operations, a temperature measuring device shall be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. Pf

2. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Pf

(i) Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Pf

j) Cleaning Agents and Sanitizers. PIC will ensure to purchase another test strip.

If a detergent-sanitizer is used to sanitize in a cleaning and sanitizing procedure where there is no distinct water rinse between the washing and sanitizing steps, the agent applied in the sanitizing step shall be the same detergent-sanitizer that is used in the washing step.

Observed 3 compartment sink pipe leaking. All physical facilities shall be maintained in good repair. PIC will repair.

Observed pull out drawer in kitchen missing front fascia. Equipment must be maintained in good repair. C/A: Advised PIC to ensure drawer is repaired and maintained in good repair.
