Observed meat slicer put away as clean. CA: PIC immediately took equipment apart cleaned and sanitized
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed cooling, cooked chicken tightly wrapped inside bowl at 48F CA: PIC immediately placed chicken on sheet trap and transferred to RIF to bring to temperature 41F or less.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee preparing food without hair restraint CA: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
