Observed ice and milk powder stored uncovered in the front food service area. Observed creamer and coffee stored uncovered in a front food service RIC. Observed cheese and fruit stored uncovered in the front food service RIC. CA: Advised PIC to cover food items to protect them from contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed no bleach sanitizer in the bleach sanibucket. PIC verbally stated that sanitizer is not used in the dish cleaning process. CA: Advised PIC about the wash, rinse, sanitize process for dishes as well as the need to replace the sanibucket.

Observed food items in multiple RIC's stored without labels including grass jelly, creamer, coffee, egg pudding, and mangoes. COS PIC labelled items.
11D - thermometers provided and accurate
Regulation: 511-6-1.05((2)(l) - tmd, ambient air & water - accuracy (pf)
Observed no thermometers for measuring ambient temperatures in the cold holding units in the front food service area, the main kitchen, and the freezer storage. CA: Advised PIC to obtain thermometers for the accurate measurement of ambient temperatures.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed multiple broken floor tiles in kitchen exposing unsealed concrete underneath. All physical facilities shall be maintained in good repair. PIC will have floor tiles repaired or replaced
