4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed a dishwasher unable to reach 180 or above for hot water sanitization. CA - PIC will contact their vendor to service the dishwasher. PIC will have all dishes hand washed in the 3C Sink until it is repaired.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several opened dairy products that were not date marked. CA - PIC had the opened products date marked. PIC will ensure that any opened products are dated.
