Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed a sanitizer concentration below the recommended range. The recommended range is 272 - 700 ppm for lactic acid/ sink and surface. PIC had the sanitizer hand mixed and contacted their vendor to service the Santiizer line for their 3C sink.
