NOTE: Observed Ice container in drive thru to not have a lid or cover. When not in use food should be stored covered. Manager added lid to COS on ice bin.

Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
This does not apply to employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food, clean utensils and linens and unwrapped single-service and single-use articles.
NOTE: Observed employee frying foods without a hair restraint. Employee left prior to being able to COS.

NOTE: Observed Tea urns to not be 6" off ground. Tea urns were on floor and manager COS by wash, rinse, and sanitizing urns.

The RIC across from the ice machine was not cold holding a temperature of 41F or below. See Temperature observations*. PIC voluntarily discarded out of temperature food items (2 containers of sliced tomatoes, 4 big and 4 small containers of lettuce, and 2 containers of diced onions) and remaining in temperature food items ( breakfast burritos and packaged sauces) were moved o the WIC or other working RIC to COS. Except during preparation, cooking or cooling or when time is used as the public health control, time/ temperature control for safety food shall be maintained at 41F or below. PIC adjusted the temperature setting of the RIC, RIC ambient temperature is 36F ( See temperature observations) to COS. Monitor RIC and Check it is maintaining a temperature of 41F or below, If still having issues have th RIC serviced such that it can be maintained 41F or below.
