6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed TCS cold-held food product held greater than 41 degrees F. COS PIC discarded the TCS food product greater than 41 degrees F. PIC called the repair man to come out and service the walk in cooler. The walk in cooler shall be verified by the local health authority (that it is holding temperature at 41 degrees F and below) prior to storing cold held TCS food product in the unit. CA: Have the walk in cooler maintained.
