Inspector observed employee beverage in a single service cup without a secure lid and straw on the food preparation counter. COS-discarded. Corrective Action: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed.

Inspector observed containers of cooked pasta in prep top cooler date-marked for 3/28/26 and 3/30/26. PIC states that the pastas had not been frozen after the date marked. COS-discarded. Corrective Action: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen.
