Observed several dented and swollen orange slices cans on the shelf with all other canned goods in the dry storage area. COS- Cans were discarded. Advised PIC to designate a shelf away from canned goods area to store dented cans for return credit. Provide signage " dented cans do not use" and label cans with an 'X" or other means that indicates do not use.

Meatballs on steam table were being held at 117 degrees F. COS - reheated. Advised PIC to hold at 135 degrees F or above.

Bean salad and tossed salad not logged with 4 hour discard time on TPHC log. Bean salad was at 41 degrees F and salad was at 48 degrees F. COS -discarded salad. COS - logged temperature of bean salad. Advised PIC to log temperatures of TCS foods to ensure they have starting temperatures of 41 degrees Fand to keep written documentation of 4 hour discard time.
