Observed employee washing food contact surfaces twice: first time manually and second time mechanically. However, mechanical dishwasher did not have sufficient concentration of Cl at 0 ppm. COS: PIC will only have employees wash food contact surfaces manually, with the 3-compartment sink at 50 ppm Cl. Advised to discontinue mechanical dishwasher until repaired.
