6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed small prep top unit (adjacent to walk in cooler) not holding food product at 41 degrees F or lower. Corrective Action: Have unit serviced to maintain food product temperature of 41 degrees F and below. COS PIC discarded all TCS products in the unit.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(t) - food preparation (c)
Inspector observed 4 utensils of dough - during the preparation process - uncovered and on the floor (Location: Adjacent to 3 compartment sink and hand sink). Corrective Action: During preparation, unpackaged food shall be protected from environmental sources of contamination. COS PIC discarded prepped dough on the floor.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Inspector observed flies throughout the facility and several flies around the grease trap. Corrective Action: Continue working with pest control company to eliminate pest.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(d),(e) - grease trap; conveying sewage (c, p)
Inspector observed a crack on the internal grease trap lid. Inspector observed the flooring surrounding the grease trap is in disrepair. Corrective Action: Maintain grease trap lid and the surrounding flooring.
